Prepare pesto, put in a jar or a little container and use them as a fragrant base to make, sauces or to add to risottos and pasta dishes.
I also find them handy when preparing some aperitifs for impromptu gatherings ! I take a spoon or two add more olive oil and they become dips. Toasted bread on the side, some cheese, wine and it is a fiesta !
And for little savoury snacks, nothing easier than to open the pesto jar and prepare some tartines or use it as a spread in sandwiches.
So I use pesto endlessly and I hope you'll do to. It is a healthy option without having to spend too much time preparing for it each time you would like to cook a dish!
Here is one of our favourite green pesto recipes; spinach and Garlic pesto, it is delicious!
EASY PREPARATION METHOD
In a processor blend all the above ingredients, making sure to add the extra virgin olive oil little by little until getting a smooth, slightly liquid paste.
For spinach pesto, I always use a robust intensity Extra Virgin Olive Oil. It just adds so much fragrance to it and brings all the flavours to life. We also really want to make it very concentrated in flavours so that when it is added to food, it retains a lot of character and brings exquisite aromas to the ingredients we are mixing it with.
Enjoy, it's healthy and uber delicious, used raw or cooked as a base for quick yummy dishes en sauces.
