Lentil Soup with a drizzle of olive oil

A classic hearty and filling lentil soup recipe to warm your soul! Pure comfort, naturally thick, loaded with heart healthy grains and veggies and topped with the most delicious olive oil drizzle! This is truly a winter classic in my house whether as a starter or as a main and it is the easiest to make. 

The secret ? A balance of olive oil and lemon when serving. Quality oil and acid; a royal combo that will never fail! 

Serves 4 | But if you are on your own, that’s great news, first there will be more for you! And you can easily freeze if there any left.

Preparation | 10 minutes 

Cooking time | 40 minutes 

 In a large pan:

3 spoons of olive oil: ELY SÉIDE Délicatesse Extra Virgin Olive Oil is simply the best for cooking, so tasty without overpowering any of the other flavours. It also has some almonds notes that bring so much harmony into the dish. This extra virgin olive oil is pressed when the olives are ripe (purple colour) which brings an amazing full body flavour.

Tip | Low temperature until you add all the following ingredients: 

1 oignon, chopped 

Suggestion | 1 spoon of ground spices such as paprika, coriander seeds or  a rasalhanout mix, make sure it is sizzled slightly in the oil (That’s how spices release their flavours the most) 

1 spoon, tomato paste or passata 

3 carrots cut in small pieces 

1 potato cut in small pieces

3 crushed garlic cloves (I love garlic so I tend to add 4 or 5), very important to crush so the garlic flavours and nutrients are released 

Sea salt & ground Pepper 

Suggestion | I also add chilli paste or chilli relish to bring flavours to life with a bit of a kick

Add 1.5 litres of water 

Cover, increase the heat to bring to a boil and simmer for about 30 minutes 

After 30 minutes, bring the heat down, blend well and give it another 10 minutes on low heat to thicken a bit more. 

Serve in bowls | 

Top with a drizzle of Délicatesse olive oil, it will bring such a nutty touch to it! And a generous squeeze of lemon. 

Suggestion: Add fresh parsley or coriander to taste.
