Oleology is the scientific study of the olive trees and its production.
- What is biodynamic farming?
Biodynamic farming is an holistic approach to farming, focusing on protecting the environment. It is ethical and ecological. In the case of Ely Séide, we focus on gentle handpicking of our olives, preserving the greatest amount of anti-oxidants (see below for more information). We do not use any pesticides or additives in our oils. No machinery operates on our land.

Our heritage, our terroir and our way of farming make us different. Our trees are allowed the space to grow and breathe. We protect the antioxidants in our olive oil at every stage of our manufacturing process. We care for the people who work for us and for our environment.
- What are antioxidants?
Antioxidants are molecules. They fight damage from free radicals, can contribute to cell regeneration and have other benefits for health including protecting cardiovascular health and potentially warding off (Type II) diabetes. Antioxidants are found in various foodstuffs, but Ely Séide olive oil contains three times more antioxidants than standard olive oils at times of extraction thanks to our expertise in oleology.
- What are polyphenols?
Polyphenols are micronutrients that are found in certain plant-based foods. They contain antioxidants and other health benefits. It is thought that polyphenols can protect against certain neurological conditions, cardiovascular disease, digestion and diabetes, amongst other things.
